I think it would be more sensible for the GUI to just show "3.36". Because the third component is different for different GNOME packages. It doesn't make sense to declare the whole system is "3.36.3" or "3.36.4".

I know that the Ubuntu desktop is based on gnome-shell, but it seems that after upgrading to 3.36.4 from 3.36.3, that Ubuntu settings in About -> Gnome version -> 3.36.3, still reports 3.36.3 and not 3.36.4. Is this a bug in the settings or has the update not been "applied" to the Ubuntu variant of Gnome yet? I am using Wayland and Ubuntu 20.04 LTS.
