According to the journal errors, your computer is running GDM under X. The default is for GDM to use Wayland. My understanding is that you need GDM to run Wayland to have the option to use GNOME on Wayland.
But I don't know why GDM is loading for you with Wayland in 17.04 when it apparently did with 16.10.
