Thanks for this report, YannUbuntu. In Ubuntu Software Center 4.1.21 (and probably much earlier), this seems fixed. Choosing to remove Evolution asks only for you to confirm removal of the Evolution plugins. There are problems with that dialog (bug 844014, bug 844025, bug 844028), but it is quite simple.
