I can't find any evidence that StatusNotifierWatcher is implemented in gnome-shell, only in the ubuntu-appindicators extension. So I wonder if the extension has been reloaded (which happens when unlocking the screen) and it's conflicting with its old self by leaking something... A similar memory leak may have been found in bug 2080221 too.
Please try logging out and in again, and confirm the bug does not occur until the extension is forced to reload such as during screen lock/unlock. Please also check you don't have any unsupported extensions installed: cd ~/.local/share/gnome-shell/ rm -rf extensions and log in again.
