postfix procmail courier-imap
You can interchange postfix with exim easily enough.
I was never successful at getting procmail to work with cyrus and the cyrus documentation is extremely poor. I tried for 3 months as was very put out by the lack of support available. These guys who developed cyrus did a good product, but the entry barrier is huge.
courier-imap and uw-imap are nice products. uw-imap only does mbox file.
