I obviously want to track stable (since this server needs to be
secure), but there are a few packages that I want from testing or
unstable.  How to do this?

IIUC, that messages describes how to install binary packages. In fact, the whole thread seemed to focus on that. The Debian Reference (section 6.4.10) suggests that it's better to compile from source packages, so you don't end up upgrading libc, for example. Is this really true?
