I followed and adapted this guide to convert my Debian + Windows 10 + Arch Linux boot drive to GPT: https://www.rojtberg.net/1032/converting-a-ubuntu-and-windows-dual-boot-installation-to-uefi/ The steps are roughly, use gdisk to convert the drive, then there's a lengthy op to do Windows and then Linux, which amounts to installing grub-efi in a chroot and not much more, if you don't want secure boot. No destruction of partitions or data. I had one issue with Debian, regarding my swap partition. But that was the only problem. Arch and Windows were just fine.
