I found gitit, that looks interesting, but I have not found a public

What about Mediawiki? It doesn't use Git for versioning, but has versioning built in. Mediawiki is:

1. In Debian - https://packages.debian.org/bookworm/mediawiki
2. Familiar to users - It's the engine used by Wikipedia
3. Extensible - There are extensions to add Markdown syntax -
   https://www.mediawiki.org/wiki/Markdown

If markdown is not a hard requirement (i.e. if you want something that is *like* markdown), MediaWiki's "WikiText" format shares many similarities to Markdown.
