Unless you have a specific reason to use testing, I suggest stable on all your machines. Stable is much closer to the LTS releases than testing. But since you didn't say what your complaints about xubuntu are, I can't give you any guidance on whether you will get away from them with Debian. On stable, XFCE is at version 4.18.
