Debian *does* use git snapshots and other pre-releases for some packages, but not for Firefox ESR. Firefox ESR is taken from the closest thing there is in this world to an upstream stable release series for a major web browser. I would worry less about the firefox-esr package in unstable than pretty much *any* other package, when it comes to upstream bugs.
