Hi Gene, For CUPS - you can use lpadmin from a terminal as a command line.
Open a konsole terminal, su - inside it, then use lpadmin For the other issues: if you really want to do another install, go ahead - this time, maybe try UEFI ? All the very best, as ever, Andy Cater
