We configure and program our mail clients in real time in the very same language that the mail client was implemented (Emacs Lisp). Usually Emacs package authors add a lot of easy customization variables and hooks but everything is possible anyway. Excellent Emacs mail clients which I know: Notmuch Emacs and Gnus. Both can render HTML mail in text format using a variable width font.
