It's hard to say. You didn't tell us what display card(s) you have, or
how much memory you have, or what major programs might be running at
the time. Is this a fresh installation, or has the system been running
correctly until recently?

You might have faulty memory. To test that, install memtest86+,
reboot, and select it from GRUB's menu. However, memtest86+ does not
test video card memory, a likely culprit.

More likely, some program is being loaded (perhaps multiple instances
of it) and hogging all the memory. That won't be easy to diagnose. I'd
start with some careful reading of the boot portion of /var/log/syslog.

Both of these suggestions require that you be able to log in before the
system locks up. Can you CTL-ALT-F[1-6] to get to a terminal log-in, or
can you ssh in?
