What version of grub and/or os-prober are you using? It may simply be that you're using a version which is too old to know what "Windows 8" is. Alternatively, it may be that there's no reliable way to differentiate between Vista and 8 from a booting perspective (though this is unlikely; what if you were triple-booting Linux, Vista and 8?
