As Steven said, pay attention to not update all your system.

So, an example how to track testing with some packages from unstable:

Just add this to the "/etc/apt/preferences" file:
Package: *
Pin: release a=unstable
Pin-Priority: 100

I have to say unstable saved my system more than once.
