Hi, years ago I used xmms with many plugins, but I can't remember the
gui start command.

Perhaps install xmms2tray, and open it by clicking on the tray icon?
Should work for GNOME and KDE (but again, I'm not currently running
it).

To see the binaries in a particular package, use:
dpkg -L {package-name} | egrep bin

gxmms2 looks like a package that should do the trick. Another way, if
you can start from the menus, do so, then in a terminal run
ps aux | egrep -i xmms

and that should give you some good clues...
