When you specify the guest operating system type, do you have the option for 64-bit OSes? When creating a new Virtual machine, if you select, say, "Debian", you'll get a 32-bit virtual processor. What you need to do is select "Debian (64-bit)", if available, and then your guest can access the 64-bit capabilities.
