Why do you want to do it yourself?

Just extract the sourcepackage (dpkg-source -x <dsc>). cd into that
dir, make your modifications and build the package (dpkg-buildpackage
-rfakeroot). The new .dsc and .diff.gz then are automatically created
and the deb with results as this build is created...
