Using xbindkeys, I assigned
/usr/bin/amixer set PCM 5%+   to   Ctrl+Up
/usr/bin/amixer set PCM 5%-   to   Ctrl+Down

An advantage of xbindkeys is that it works in other WMs and DEs as well.
Not exactly GUI, but I find it even easier than that.
