IA-64 is Itanium, which is a completely different CPU that was originally targeted at servers, not desktops. You'll want amd64. Some people would suggest sticking with a 32-bit on such a system, because of the relatively low-memory footprint. OTOH, when I put together my first 64-bit system last summer, I only had 2 gigs of RAM, and I went to 64-bit.
