Maybe I spoke too soon.
OOo v3 is not available from backports. It doesn't even seem to be
available from sid. You'd have to add "experimental" and I'm not even
sure that would work (I don't have any machines with experimental
configured, so I can't check.)

Yes, OO.o is in experimental. Just add any repository mirror that has
experimental, and apt will do the work. And it is ready for production,
IMO.
