This should work fairly well. I have these lines in my .vimrc:

autocmd BufReadPre *.pdf set ro
autocmd BufReadPost *.pdf silent %!pdftotext -nopgbrk "%" - |fmt -csw7

and I can read most PDFs I have with vim.
