Hi Zach,
I had a look at your xorg.conf file that you pasted up and I'm not surprised
you're having font problems. There's nothing in the fonts section of your
config file. You have:
Section "Files"
EndSection

I have (xorg version 7.2-5):
Section "Files"

# The location of the RGB database.  Note, this is the name of the
# file minus the extension (like ".txt" or ".db").  There is normally
# no need to change the default.


# if the local font server has problems, we can fall back on these

    FontPath    "/usr/share/fonts/X11/misc"
    FontPath    "/var/lib/defoma/x-ttcidfont-conf.d/dirs/TrueType"
    FontPath    "/usr/share/fonts/X11/Type1"
    FontPath    "/usr/share/fonts/X11/100dpi"
    FontPath    "/usr/share/fonts/X11/75dpi"
    FontPath    "/usr/local/share/fonts"
EndSection

I'd say you're definitely missing something.
