GNOME is a DE (Desktop Environment). It "does more" than a plain old wm (window manager). Because it does more, it's thicker, uses more RAM (and CPU if you turn on all the fancy stuff that's really only suitable for not-yet-grownups). The standard GNOME window manager is Metacity (rhymes with capacity).
