This is a common setup. I set it up for my LAN 4ish years ago.
Install fetchmail, postfix, spamassassin & courier-imapd.
When you install postfix, during the config questions, tell it you
want to be a relay and then specify your ISP's smtp server.
You'll have to create an account on the mail server for each client.
Then, in turn for each account, su and run maildirmake.
Next each account will need a ~/.fetchmailrc with which specifies
the ISP pop3 server, username and password. I suggest each user
also have a crontab entry that runs fetchmail every 8th minute.
Lastly, each client will have to be set up for IMAP (looking at the
LAN mail server) instead of POP, and the smtp server also be the LAN
mail server.
I'm probably leaving out something important, but it's late...
