you will need to edit:
/etc/udev/rules.d/z25_persistent-net.rules
Here is what mine looks like:

You probably have two entries. Edit to flop around the one you want to
be eth0. Currently I am using the 3c59x card to do this. I put the other
one in there to use from time to time.
Once you get that taken care of... you should be all good.
