There's really very little difference. Dovecot is supposedly a little faster, but if you reached the point where that becomes an issue you need to look at cyrus anyway. Haven't done Dovecot on Debian (do it all the time on RHEL tho). For Courier, just apt-get install courier-imap (I think that's the package name). There's nothing to configure unless you want to use virtual users/domains and/or ldap/mysq. Plenty of good documentation about that on the web.
