I think, at this point of time, you can do this by just changing unstable to etch in the /etc/apt/sources.list. However the path wont be very smooth and expect some bumps. My advice is simple, update package by package as you seem necessary; avoid massive changes such as those result from dist-upgrade etc., Be careful when dealing with large packages like KDE, xorg etc., Pay attention to packages that will be remvoed when you apt-get something.
