If I understand you right, you get mail from several lists as well as personal and work mail all through one account, and you want to have the different categories to to different folders in Evolution. I do this. I don't even use any other mail agent (fetchmail or such - I probably will in the future). I entered my pop email account details into Evolution, and all the mail comes into the Inbox. Where I select one example of each mail type (I can select by sender, recipients, mailing list!, or subject) and tell Evolution which folder I want such mail to go to. I can create the new folder on the fly during this process, if I want to. The first time, I then use Ctrl-A to select all messages, then right-click in the Inbox list to get a context menu and select "Apply Filters". Evolution filters all the mail into the newly designated folders, and then does it automatically from then on. No fuss, no muss.
