For the record, I tried Florian's approach of renaming using udev rules, but avoiding the standard eth0, eth1, ... names. And it seems to work.
The new names appear only under /sys, not under /dev. And thanks, Florian, for a very helpful response. I'm still puzzled by the whole /dev vs /sys thing: why there aren't entries in /dev for ethernet and why udev, advertised as something to manage /dev, is changing /sys.
