Leave sasl_mech_list in /etc/imapd.conf disabled:
allowplaintext: yes

sasl_pwcheck_method: saslauthd
If you create users (adduser --no-create-home test), it should work with
PAM in /etc/default/saslauthd.
You can use another authentication mechanism, but then you need to take
care that your MTA will accept mails for those users rather then deny
them with 'unknown user'.
