Check again; gtk2 and gnome2 are in testing. See
http://www.debian.org/distrib/packages
and search package directories for the packages you want, looking only in testing. I see all the gtk2/gnome2 stuff.

Look at gnome-control-center, gnome-applets, gnome-panel, gnome-session, gnome-terminal... gtk2 is in testing, though, and coexists with gtk1.
