LUKS is supposed to be the future, but it's not in Debian proper yet. You can use it if you install it manually, but I read that there may be another on-disk format change coming. I'm not sure if that's true, but if it is, it would be wise to wait until the change happens. I may be wrong, but I think the current state-of-the-art in Debian is cryptsetup. Works well, AFAIK.
