For a server, you probably want Sarge/Stable.

For a workstation, if you want the latest and greatest, and are willing
to risk a little (or a lot) of breakage every so often, you probably
want Sid.

Why not Etch for a workstation? Because
1. you'll get newer toys faster in Sid, and
2. if something breaks in Sid, it's usually fixed in a couple of days;
if something breaks in Testing (Etch), it may be a couple of weeks
before it gets fixed (of course, the antithesis of this is that Testing
is liable to break less often than Sid, so YMMV).

Most of us who run Sid on our workstations still see more reliability
than we ever saw when we were running Windows. In other words, for a
workstation, Sid is not a bad choice at all (for most people).

Then you can choose at that point to keep following Etch, or to start
following the new Testing.

No-o-o-o-o-o!
That's one of the beauties of Debian; you install it once; upgrade it
(if you so choose) forever.
