I haven't used any of the web tutorials, I learned Perl from the
O'Reilly "Learning Perl" book.  Perl would do what you're wanting very
well.

O'Reilly also has a "Learning Bash" book (or something like that).  I
have not used it, but their quality is pretty consistent.
