Use dselect. When you try to purge a package that provides an MTA, a dependency alert will be prompted. You'll see again that it would also remove packages dependent on an MTA, but this time, you'll also be able to select alternative MTA's (such as qmail, Postfix, sendmail, fetchmail, etc...).
