The packages aren't broken. Switch to a gtk theme that correctly and completely specifies which font(s) it wants to use, and most of your problem should go away. What you're seeing is applications that are making wildcarded font requests, and expecting that what they're going to get back is an 8-bit font. This is no longer guaranteed.
