I highly recommend abcde. You'll have to provide your own encoder. On Woody, abcde defaults to producing OggVorbis files; it's the same concept as MP3, but free of nasty patent problems. (See http://www.xiph.org/ogg/vorbis/ for details on both Vorbis and the patent issues with MP3.)
