(you use sid, right? Because that's the only one that actually carries
Gnome 2)

apps for which a Gnome 2 successor exists should be upgraded by apt. The
others (evolution, galeon, to name only the most important ones) I'd
think you don't want removed (and neither their libs), because you will
want to still use them. There are lots of Gnome 2 packages that won't be
installed by 'apt-get install gnome'. You may want to apt-get search or
have a look at the archives of the debian gtk-gnome mailing list.
