If you really want to use GNOME, just skip gnome when you install debian, then add 'deb http://spidermonkey.helixcode.com/distributions/debian unstable main' to your /etc/apt/sources.list, then apt-get update and apt-get install task-gnome-desktop. I guess that's closer to what you want.
