There is a lot of work being done in this area, but at this time I don't know of any "finished" systems. Check out http://www.linuxce.org/ for more info.
For the project you have in mind though, I think a symbol scanner might be the best bet. basicaly is a palm III with a built in barcode reader, It comes with all the APIs so you could write an interface that would run under linux.
