I believe you can reconfigure netatalk to not use appletalk, one way to force it for sure is to remove appletalk from your kernel and disable the appletalk module. then just have your mac users connect via TCP/IP (which netatalk supports as well) as long as they use the appleshare 3.8* extension TCP/IP is not a problem for them.
