Thanks to all who offered advice, but I did finally find a way to trick sendmail into using the address I wanted it to (as you can see by my address on this post, hopefully).
The FAQs and so forth were never a help to me. I just kept changing my configuration files around until it worked. (Took a few hours, but I'm stubborn heheh.)
