Start with 'man X' there is a section titled RESOURCES that describes how they work and the general syntax as well as gives a few examples. Then take a look at the some of the files in /usr/X11R6/lib/X11/app-defaults for some more examples(don't copy these whole files into your own Xresources file). Finding out what resources an application understands can be another whole adventure. Sometimes the man page or documentation will describe some of them other times you are left in the dark. The editres app can help out with this on apps that use the X toolkit, it shows you all the resources of some apps and allows you to edit them.
