You do have the opportunity to check what is being installed in the various profiles - open a second terminal (Alt+F2) when you're at this stage of installing Hamm, and check the files in the "profiles" and "tasks" (I don't know the exact names, so they might be different) subdirectories in /root. Nevertheless, in dselect's install phase you are asked the question "do you wish to select the packages to be fetched" - your last chance to reduce the number of packages to download.
