This is quite simple - I do it myself: You have one line in your crontab like this:
5 1 * * * /usr/bin/apt-get update ; /usr/bin/apt-get -d -y upgrade -d is better because it will download the file, but not upgrade. -y is needed so that it will say 'yes' to downloading the files.
