There are several approaches to a solution. First you can set the "Reply-To:" header in M,S,C,customized-hdrs But there´s no easy way to set this header globally, e.g. the "bug" program for reporting bugs to the debian project, does not honor a "REPLYTO" environment variable, nor a configuration entry for this (AFAIK --- this may have changed now) or emacs/gnus, etc. Some programs honor /etc/mailname, where you can set an other name for your system for outgoing mail. Savest is to configure your MTA (read smail) to masquerade as some other host and using translation tables for outgoing mail. As I´m a happy sendmail user, I´m sorry I can´t help with smail to this respect.
