There's a short FAQ:
How do I get antialiased fonts in GNOME 2?
Add the following line to /etc/environment:
GDK_USE_XFT=1
Also, if you want antialiasing in GDM, add the following lines near
the top of the /etc/init.d/gdm file:
GDK_USE_XFT=1
export GDK_USE_XFT
