sendmail has a different security hole every week, smail has not. Smail works EASILLY with UUCP, sendmail is more difficult, particularly when you are trying to manage routing in a large network.
For the vast majority of cases, smail is much MUCH easier to configure and a lot easier to follow from reading a config file. You can go blind staring at sendmail.cf.
