Just making sure that the installation was correct. It is a blank window, not an empty document. Seems like Sun would at least put some sort of logo here or provide an option to start the application with a empty default document of my choice.

SO & OOo work on documents. SO7 provides you an empty document. What's the problem?
Well, it seems SO7 doesn't provide him with an empty, but with *no* document. Still, I think that's how it's meant to be. At least some former versions of StarOffice (and maybe OpenOffice) presented a sort of desktop view from which you could start the individual applications like Writer or Calc.
The OpenOffice incarnation I have here (1.1.2) also seems to look the way you describe it. The application starter - or however you would call it - from KDE only has links to the separate apps (Writer, Calc, etc). When I start it manually by typing `openoffice' I get a blank screen with a menu on top saying File, Edit, etc. So your SO7 seems fine.
